Pop-Up Restaurants Give Chefs Creative License

A pop-up restaurant will appear somewhere in Milwaukee this Saturday.

The concept has been around for a while. The idea is to introduce diners to new and different cuisines from chefs whose work they may already be familiar with. 

But a new twist on the pop-up concept adds a social layer to it. Dinner Lab is a New Orleans-based company which sets up pop up restaurants in cities around the country – especially focusing on markets besides giants like New York and Los Angeles.

The sixth one to take place in Milwaukee is this Saturday night, at a location yet to be announced. Edie Feinstein and Brian Bourdainick of Dinner Lab joined Lake Effect's Bonnie North and food contributor Kyle Cherek in the studio.

Kyle Johnson Cherek is a culinary historian and food essayist. He was the former host of Wisconsin Foodie on PBS, and for over a decade he has chronicled regional food stories, exploring where our food comes from, and how it shapes who we are. His signature wit and keen observations have made him a sought-after keynote speaker, media contributor, and culinary storyteller. Kyle has been awarded the Wisconsin Broadcast Association Award twice for his compelling essays on food culture.
